Hey guys, today I’m going to teach you how to make the best veggie sandwich- period. It’s a simple, super easy, and super tasty lunch that I make often. It is a fantastic plant-based option that I call the open-faced arugula sandwich. The shining star highlighted in the name, is arugula. But, the beauty of this dish is, really you can use whatever you want to. Just make sure to start off with some fresh produce.
Fresh Produce Is Key!
Today, I’m using red bell pepper, some fresh avocado, fresh mushrooms and some hummus by Sabra brands.This one happens to be roasted red pepper hummus. I usually use a quarter of an avocado per slice of whole wheat toast for this dish. What I like to do is toast the bread until it’s GBD (Golden Brown and Delicious!), as Alton Brown says. He’s the host of my ALL-TIME FAVORITE cooking show, Good Eats! And, that was one of his favorite catch phrases. I’ve now adopted that and have taught my kids GBD. Anyhoo, I stir up the hummus, so that all the lovely roasted red pepper is evenly distributed. I start with a base of hummus. I like a lot of hummus because it’s pretty filling and very satisfying. It’s chickpea based, and it’s super healthy with all the benefits of the healthiest legumes.
Next, I’ll sprinkle a few sunflower seeds or any kind of nut or seed that you would like in there. This layer adds some incredible healthy fats, protein, and some valuable fiber. All these nutrients will help keep you fuller, longer, as well as keep you satiated or satisfied longer.
Then, I like to start off layering the mushrooms. I make a nice mushroom based down there. The mushrooms add a meaty texture to the dish that’s really delicious. They also add more beneficial fiber. I like to pack this sandwich full with lots of fresh veggies. That’s cool.
We now move on to the avocado. I’ll just place the avocado on top of that layer of mushrooms. You can dice them like I have done here. Or, if you prefer, just mash the avocado with a fork and spread it over the mushrooms..
To Salt….Or, NOT to Salt?
I’m trying to go salt-free and oil free these days. But, if you’d like, you can sprinkle a little salt and pepper on top of this. Additionally, I sprinkle some granulated onion or powdered onion on top of that as well. The onion really compliments the avocado.
Honestly, you can adapt this recipe to include whatever ingredients you have on hand. For me, this is just a beautiful example of a really refreshing, super simple, and delicious plant based dish that anyone would enjoy. And, even my meat-eating friends agree, it’s very filling and satisfying.
Slap me some GREEN!
Next, I lay down a nice little bed of red bell pepper, like so. Next, I top it off with a nice big handful of fresh arugula. I pile those greens as high as possible. You want as much of that in there as I can get. After all, this is Dad Goes GREEN, right?
There you have it! You’ve got your fresh, open-faced arugula sandwich. It’s got hummus in there. It’s got mushrooms in there, I’ve got some fresh, diced Avocado, some fresh bell pepper. Man, that looks yummy and fantastic. So, Bon Appetit! I hope that you all enjoy it.
